Key Lime Cookies Recipe

Makes 3 1/2 dozen
Dough:
3/4 cup (1 1/2 sticks) butter, slighty softened
3/4 cup sugar
3 egg yolks
zest and juice of a lime
2 cups all- purpose flour
1/4 teaspoon salt

Icing: (ices a little more than 12 cookies so you may need to triple the recipe to ice all cookies)
1 cup powdered sugar
grated peel and juice of 1 lime
1 teaspoon light corn syrup

1.Beat butter and sugar in large bowl with electric mixer at medium speed 1 minute. Beat in egg yolks and zest/lime juice until well blended. Scrap down sides of bowl. Add Flour and salt all at once; mix until well combined. Divide dough in half. Shape into two logs, each measuring 6x1 1/2 inches.Roll each log in green sugar (i used regular white sugar) to cat well. Wrap each in plastic wrap. Refrigerate at least 2 hours or overnight.

2. Preheat oven to 375 degrees F. Line baking sheet with parchment (wax) paper. Unwrap chilled logs. Cut logs into 1/3-inch-thick slices. Place cookies 1-inch apart on baking sheets. Bake 12 to 14 minutes or until edges are light brown. Cool cookies on pans 5 minutes.

3. Meanwhile, prepare icing. Whisk together powdered sugar, lime peel, juice, and corn syrup in small saucepan. Stir over low heat until sugar is dissolved and icing is spreadable. Spread icing over top of warm cookies. Icing will firm as cookies cool completely. Store in airtight container.
